RICOTTA

Traditional, creamery, whey cheese made from whole cow’s milk. Ricotta should be white, mild, firm, and consist of a mass of fine, moisty, delicate grains; it cannot be ripened. It is primarily made with cow's milk whey, which is heated. It is a good ingredient in Lasagna.
