Mrs. Gisa’s recipes and how to cook with Jikang Italian Cheeses
Appetizers
| 1. Cherry tomatoes with Cow's-milk Caprino |

| Ingredients (serves 4) |
12 small round cherry tomatoes
2 tablespoons Jikang’s grated cheese
60 g Jikang Cow's-milk Caprino
2 tablespoons cream
few leaves of lettuce
salt and pepper |
Method
Cut the cherry tomatoes in half and scoop a bit of flesh out. Then arrange on plates on top of a few leaves of lettuce. Mix the Jikang’s Caprino with the grated cheese, cream, salt and pepper until creamy then, using a pastry bag, squeeze a bit of filling into each tomato half and serve
PIZZA
2. Pizza 4 cheeses
Ingredients (serves 4)
180 g white flour
1.5 ml salt
5 ml / 1 tbsp easy-blend dried yeast
15 ml olive oil 150 ml hand-hot water
TOPPING

75 g Jikang’s Gorgonzola style, sliced thinly
75 g Jikang’s Mozzarella cheese, diced
75 g Jikang’s Smoked Provola |
75 g Jikang’s Fontalcina, coarsely grated
Optional: few slices of pepper salami
Oregano
45 ml / 3 tbsp olive oil |
Steps:
1. Take a big bowl and put salt and flour into a large mixing bowl and add the yeast. Make dough, adding olive oil and hand-hot water (to make it soft)
2. Leave the dough aside for about ten minutes. Meanwhile, take a clear bowl; cover it with clean film and leave in a warm place for one hour.
3. Preheat the oven to 220 C. Turn the dough on to a lightly floured surface and knead again for 2 - 3 minutes. Roll out to a 30 cm round and place on a baking sheet.
4. Score the pizza into quarters. On one quarter put blue cheese on the other one Mozzarella cheese. Fill the rest with Smoked Provola and Fontalcina. 5. Drizzle the top of the pizza with olive oil and bake for 20 minutes in the oven.
PASTA
3. Asiago sauce for Pasta (Spaghetti or Penne)
Ingredients (serves 1):
1/4 cup Jikang’s Asiago cheese (grated)
1 cup heavy cream
1 tablespoon butter
1 clove of finely chopped garlic |

Steps:
| In a sauce pan, melt butter and garlic, making sure not to burn garlic, add heavy cream and let thicken, add cheese and mix together with spoon until thickened’
Add pasta (already cooked al dente) |

DESSERT
4. Tiramisu
Ingredients (serves 6 people):
6 fresh eggs, 450gr.Jikang’s Mascarpone
cheese, 150gr. sugar, 300 gr. savoiardi
cookies (lady fingers), about 12 servings
black Italian espresso coffee with no
sugar added, 1 shot of your favorite liquor,
bitter powder cocoa. |

Steps:
Beat together, in a medium bowl, egg yolks and sugar until light and creamy; fold in slowly mascarpone cheese and a shot of liquor until well mixed.
Whip eggs albumen until light and fluffy; unite the two egg mixtures folding the creams together delicately.
In a glass-baking dish (rectangular), start with a layer of dipped in coffee savoiardi cookies, then a layer of the cream, repeat, ending with cream. Add on top bitter chocolate cocoa (best if the cocoa is add right before serving).
Put in the refrigerator for at least 2 hours before serving
